ZUCCHINI LASAGNA | the best zucchini lasagna recipe

Ingredients 6 cups fresh sturdy vegetables, chopped (red or yellow peppers, cauliflower, broccoli, carrots, etc.) 1 1/2 tablespoon olive oil 2 teaspoons salt (more to taste) 1 onion, minced 6 cloves garlic, minced 10 ounces whole wheat lasagna noodles 1 jar spaghetti or marinara sauce. Directions: Preheat the oven to 350°F. Coat a 13″ X 9″ baking dish with cooking spray. Heat the oil in a medium skillet over medium heat. Add the zucchini and cook for 5 minutes, or until crisp-tender.

In a medium bowl, combine the ricotta, egg, basil, sal. INSTRUCTIONS. Put the whole wheat flour, eggs, tablespoons of oil and water. Process until the dough begins to peel off the bowl of the processing machine (dough does not need to be homogeneous, just little mixing). Wrap the dough in plastic kitchen film.

Whisk egg into ricotta cheese and stir in fresh spinach. Pour a little sauce in the bottom of a greased 9×13 pan. Top with 4 lasagna noodles,1/2 cup ricotta mixture, ½ of the veggies, and ¾ cup sauce. Repeat; top entire pan with noodles, remaining sauce, and mozzarella cheese.

Ingredients. 1 8-ounce package whole wheat lasagne noodles, cooked slightly (al dente) 1 9-ounce package frozen raw spinach (well thawed and drained) 1/2 cup grated Parmesan cheese. 3 eggs. 3 cups low-fat cottage cheese. 3 cups pre-made or store-bought pasta sauce.

  • I substituted eggplant for the zucchini. I grilled the eggplant like you did with the zucchini. I like the eggplant flavor. I remove the skin of the eggplant as it can be tough in the lasagna. Tastes great. Raos is a good sauce if you don’t want to make your own.

  • I always put more veggies in the saus. Cut op unions, bellpeppers, carrots, leek, caulifower, greenbeans, peas, sellery, what ever sounds good and or l have left over.

  • Amazing recipe!!!! If I’m going to ever not make my own sauce it is because RAO’s Arrabiata is sooooo delicious. I did make my own sauce for this, I also bought the kitchen aid device and copied exactly what you did with the zucchini (from my garden) lasagna noodles. I used beyond beef vegan meat cooked with some white onion. I used kite hill brand ricotta almond cheese. It was ssooooooo delicious!!!! Thank you so much from me and my vegan daughters!
