The World Health Organization warned last month that processed meats including bacon, hot dogs and sausages can cause colon cancer. They also ate more meat cooked at high temperatures or over an open flame such as pan-fried, grilled or barbecued.

(HealthDay News) — Cooking meats at high temperatures, as in barbecuing or pan-frying, may increase the risk for renal cell carcinoma (RCC), according to a study published online in Cancer. What evidence is there that HCAs and PAHs in cooked meats may increase cancer risk? Studies have shown that exposure to HCAs and PAHs can cause cancer in animal models ( 10 ). In many experiments, rodents fed a diet supplemented with HCAs developed tumors of the breast, colon, liver, skin, lung, prostate, and other organs ( 11 – 16 ).

Colorectal cancer is the most often associated with red meat consumption, but studies show that meat eating may increase the risk for other types of cancer including breast cancer, gastric cancer, prostate cancer, pancreatic cancer, lung cancer, laryngeal cancer and bladder, kidney, and endometrial tumours.

There’s good evidence that two substances found in these foods —nitrates and heme—contribute to the formation of carcinogenic compounds known as nitrosamines in the body, which increases the risk of cancer.6 So, it’s reasonable to assume that eating too much processed meat can cause cancer.

Also, intake of red meat appears to increase risk, but protein-rich sources other than red meat probably do not elevate risk and may even reduce the occurrence of this cancer (Willett et al., 1990).

Some studies that make allowance for these confounding factors have claimed that meat specifically increases the risk of large-bowel cancer, but the evidence is weak and the increase in risk, if any, is small.

Studies have linked the consumption of red or processed meat to an increased risk of breast cancer, colon cancer, and pancreatic cancer, a phenomenon that could be due to the presence of carcinogens in foods cooked at high temperatures [41,42].
