  • So when the Japanese had a food shortage after WW2 there was a wave of malnutrition in Japan. The USA had a surplus of grain…so the Japanese started eating bread daily. Now bread is actually more popular in Japan than rice overall, especially with the baby boomers and now the younger kids.
    If white bread loses its nutrients and fiber…why is it always the go to for starving people?
    Also since the depression of the 30s, the government mandates that vitamins and minerals be added to bread. They found that a huge percentage of kids had malnutrition in school.
