It can be done with a fork (more labor intensive ��), a whisk is much better. I would like to share with you that I beat them, as well, but; I add a little bit of water. Why?   • -Get two tortillas
    -Break up a square of swiss cheese into pieces
    -Break up a square of cheddar cheese into pieces
    -Put the cheese on one tortilla, spread it out evenly
    -Add two packs of mild taco bell hotsauce to the same tortilla
    -Put the other tortilla on top of the one with cheese and hotsauce on it
    -Stove on Medium heat
    -A generous amount of olive oil in a pan
    -Pan on the stove
    -Quesadilla in the pan
    -Wait for the first side to turn golden-colored and crispy
    -Flip the Quesadilla
    -Add a little more olive oil
    -Wait for the second side to turn golden-colored and crispy
    -Take the Quesadilla off of the pan and put it on a cutting board
    -Cut the Quesadilla into eighths
    -Put the cut Quesadilla on a large plate with Sour Cream and, optionally, guacamole

    This is my depressing quesadilla recipe that I make around 3-4 times a week at 11 pm when I’m hungry
    If you’re very hungry with nothing else to make though, it lowkey slaps
    Sometimes I also add Velvedda, its optional though

  • Just made this twice. 12 inch non-stick pan was the perfect size for a standard Mission brand tortilla. Also, one egg, not beaten too much was perfect. First attempt I had heat too low so the egg had trouble releasing from the pan during flip… had to use a spatula and didn’t meet the unspoken recipe goal of being “tool free”. By second attempt, the pan was properly heated so it went pretty much exactly like the video. Was very tasty!

  • After refining my technique, I have to say this has easily become one of my favorite breakfasts. Once you get that flip down and don’t overcheese it it becomes such a satisfying and really not too heavy way to start the day. I squirt a little hot sauce in before I fold it to balance the richness of the butter, egg, and cheese. The cheese then melts and mixes with the hot sauce making this really tasty spicy orange cheese filling, almost like a lighter, stretchier version of queso. I can imagine dozens of other ways to adapt this, too, like you did with your Jian Bing. Really great work, Kenji.

  • Important to note that this works best with just one egg, depending on the size of your pan and tortilla. Tried with two eggs and it became rather difficult to fold and there were issues flipping it over.
