  • I tried this recipe last year and ever since then my family have been asking me to continuously make it.
    I made it for Christmas and I finished in two days, I had to remake another one for New years. As I’m typing this I doubled this recipe and there are two big ones in the oven. Only thing I changed was the amount of sugar and butter I used. I used about 3/4 stick of butter instead and 1 1/2 cups of sugar instead of two. They still taste amazing!

    Also I used a potato masher to mash the bananas and they still came out fine and it was much faster.

  • I know it may sound strange to hear that he uses seaweed gel on his banana bread, but agar agar is quite commonly used now. Maybe you have heard of agar agar sirup as a white sugar substitute, also agar agar gel is used commonly as a vegeterian gelatine substitute. Putting agar agar gel on cakes makes them shiny and keep them from drying out, but it’s totally optionnel for homemade cakes. My boyfriend works in a bakery, he told me that some of their products are glazed not for taste, but solely because the products need to not dry out and look shiny throughout the day. People tend to not buy products that looks a bit dull, even though they were made that day. Strawberry tarts, raspberry tarts, canapes, walnut tarts, aél those are covered by jelly or fondant primarly for preservation, not taste. And they use agar agar gel for the strawberry and raspberry tarts.

  • This is a good banana bread recipe. A few observations, for me its a little too sweet, I usually reduce the sugar because the overripe bananas are already very sweet. The other observation is the recipe says to cook for 60-65 mins but it takes atleast 70 minutes or more for me for it to cook throughly otherwise the bottom is denser than the top and it deflates when letting it cool on the wire rack.
